One of mine is salmon cakes made with canned salmon about $3 a can mixed with the Mccormick salmon cake mix $1, noodles well we all now how cheap noodles are or rice and a veggie usually frozen. ------ quiltingwolf.blogspot.com |

Any dinner leftovers topped with bisquick or biscuits and sometimes a bit of cheese. Rather like a mystery pot pie.. |

Hillbilly Housewife is a fun web site and has great recipes among other things.

Date: 12/6/11 1:29 PM I like macaroni & tomatoes & sometimes chop up hot dogs in it. ... grew up with it & seems to be satisfying & not too expensive.
I also like milk toast... just toast with butter & warm milk on top...Mom used to fix that allot! DH does not like it but I do.

 1 member likes this. Date: 12/6/11 1:32 PM Really cheap and really, really good: pasta with lentils. A pound of lentils, a big can of tomatoes, an onion, something green and you've got 20 or more servings (it freezes very well). You do have to add about 1 to 1-1/2 ounce of pasta per serving.
Even if you use fennel for your green vegetable, which is my favorite, the cost is around $8.00 for the whole thing, or less than 50 cents per serving.

My average meal costs $5.25 (I'm OCD about money) for 2 adults, one teen and a baby that thinks she has to snack on our food (so I make more gravies, potatoes and soft stuff). It's already fairly cheap, including vegetables and bread.
Probably the cheapest is chicken and dumplings, when I get 10# of chicken for $3.90. That costs me about $3.50 for a huge pot, and I get two meals out of it ($1.85 per day), although it doesn't freeze well. |

Date: 12/6/11 3:39 PM Favorite cheap things to make are various combinations of rice, beans/lentils, and chicken.
One of my favorite really quick things to make involves 2 cups of rice, one can red beans (drained and washed) 2 tomatoes, one onion, a bell pepper, some garlic and ginger, 2 packets fajita spice mix, and 4 boneless skinless chicken thighs chopped very small. I don't know what that works out money wise, but it makes a LOT of food, and freezes well. How to make it:
Prepare the ingredients: chop the onion, pepper and tomato (it works really well to chop the tomato in a food processor unless you like chunks of tomato), mince the garlic, drain and rinse the beans, chop up the chicken. In a large pot saute the onions, add everything else, when that looks close to cooked, add the rice, and enough water to cook the rice. Bring it to a boil, stir, then cover and turn off the heat, leaving the pan on the burner to steam with the residual heat until the rice is cooked through.

Date: 12/6/11 6:24 PM I love braised white beans and chard. We usually use canned cannelli beans (white kidney beans) because we can't find them dried, but you can use other dried white beans. Swiss Chard from the farmer's market is only $1 per huge bunch here, but now that it's too cold for that, I'm using frozen spinach instead.
