I used to always hear that the "best" were the Gingher's, but now it seems I am beginning to hear that about Kai, instead. Is there really any consensus, or is still a fairly individual matter? (I haven't bought a really good pair yet...I have Fiskars for shears and Mundial cushionSoft for pinking.)

Kai, without a doubt are better scissors. You will pay more, but they are much high quality. I have 3 pairs now, and prefer them to the Gingers. They are much sharper, and the professional ones stay sharp. I think they are also better balanced--just seem to sit in my hand better.
If you're headed to a sew expo any time soon, look for a booth.

I have Gingher's regular dressmaking shears and Kai pinking shears. In my experience, I think they are both excellent.

Kai. They are light and super sharp. Even after having my Gingher shears newly sharpened they still weren't as sharp. Gingher is also very heavy to my hand.

I haven't tried Kai, but I just returned a pair of Ginghers because they were too heavy and hurt my hands.

I have had Fiskars, Wiss, Gingher, Heritage, Cutco and Kai. The Kais are just so smooth and nice.
