My recent geneology search has revealed that I had ancestors living in/near Quebec City for nearly 300 years!! I am ecstatic to know this and would like to make a quilt to honor this part of my family heritage. Is there a quilt pattern that is traditionally Quebecois? I haven't been able to find anything online.

You may want to ask someone in the region, but I found one website that has some information about traditional quilts and textiles -- here and here. That second page talks about a traditional pattern called "crow's feet" that was used very early on, but there seem to be others as well.

You might also get some help by contacting the Textile Museum of Canada. HERE
It's not in Quebec, but it's a major textile museum, so someone there will probably know something about this.

You might incorporate the offical bird, flower, motto, tree, and/or flag into a design.
