I'm going to start McCall's 6324, and the materials listed for it are lightweight denim or stretch wovens. What constitutes a "stretch woven?" I made a skirt a few months ago of rayon challis (that was interesting) so I know that's one of the fabrics I could use, but I want more options than that.

A stretch woven is one that has a percentage of lycra.

They can be almost any fabric content or weave. I've seen stretch sateen, broadcloth, twill, pique...the options are pretty endless.

I would also hesitate to use a challis in a pattern that also calls for a lightweight denim...take into account the weight and body of the recommended fabrics. Challis is light and drapey, and if the pattern requires a fabric with some body, challis will not be an acceptable substitute.

Most rayon challis is not usually considered a stretch woven-it is more flowy than most fabrics but has little stretch except on the bias (it is one of my favorite fabrics). A stretch woven probably has some lycra in it-stretch poplin comes to mind which is a nice material to sew and to wear. I know twill comes in a stretch version but that would be too heavy for this dress. If a stretch woven works, you could probably use a stable knit (ponte maybe) or anything with a one way stretch. I used a knit for Simplicity 2648 and it worked well.

As mentioned above, a stretch woven is like a normal woven fabric, with about 3-5% lycra (or similar). A lot of RTW clothing is made this way - like pants, button-up shirts, etc., because it's more comfotable.
For an easy search, you can go to the gorgeousfabrics website. On the menu at the top there is a 'stretch' section (separate from knits). You can order swatches of a variety of different weaves to get an idea of what you like best.

No, I agree you can't substitute rayon challis for denim! This pattern is calling for a sturdy fabric that doesn't have much drape and rayon challis is not that.
