But is it okay to tape interfacing together to have enough before you iron it on the fabric?

You can piece it together and just fuse the pieces of interfacing to the fabric. I do that when needed. I suppose you could use something like Steam-a-Seam to "tape" it but I would not use tape Regular tape will melt and get nasty...

I have found that what you are considering can sometimes transfer it's outline to the outer fashion fabric. What do if I have to piece IF is cut the butting ends with pinking shears and merge them together when fusing to the fashion fabric . This eliminates the outline transferring to the outer surface.
