I want to make a ruffle neck T like I keep seeing in RTW and I'd like to use ITY. Problem is this knit rolls on the edge so I can't leave it unfinished. Tried a lettuce edge and I'm not crazy about that. Any suggestions?

I've had good luck with a cover-stitch. You may need to use some wash away stabilizer to keep it flat while you stitch.

I don't have a coverstitch. I was thinking about a small hem using wash away wonder tape and the sewing machine.

You might want to look at some of these treatments for sheer, lightweight fabrics. They might be adaptable to your purposes, and an ordinary sewing machine is used.

try steam a seam light in 1/4 for a narrow hem

I just bought a ruffled blouse made with an ITY knit. The ruffle is unfinished and cut with a rotary blade, or that is how you would replicate that finish.
If it helps, the ruffle is cut on the non-stretchy side. (you would cut it out on the length and NOT on the cross width) Can you make a sample and see if it still curls?
