Date: 10/4/12 10:11 PM So, I drank the KoolAid and joined the Vitamix collective 
DH is leaving tomorrow for a week and the freezer not being well stocked enough to get me through, and fruit-only smoothies get really old after a few days. I love cooking with DH, but I know I won't want to bother cooking and especially cleaning up just for one. Vitamix seemed like the perfect solution.
I am already perusing the recipes and making a list of all the yummy fresh things to buy at the store tomorrow.
I don't see yogurt called for in any of the soup recipes. There's one recipe for a squash soup that sounds yummy except for the evaporated milk. Yuk. Is there any reason I couldn't substitute plain greek yogurt? I'm sure the taste would be different, but is there any general problem with using yogurt in the soup?
Is there any problem with cutting a recipe in half and still using the full-size carafe?
Mostly I got the thing to make green smoothies, but I'm hoping to enjoy some soup recipes as well.

Date: 10/4/12 10:21 PM I am no help with answers, but I am GREEN with envy! I want a vitamix, and hope to get one by the end of the year. They are AWESOME! So good because they use the full fruit/veggie and don't just press the juice out.

Date: 10/4/12 10:37 PM I love mine too. There is no reason why you couldn't sub yogurt. I do it all the time, and I don't find it changes the flavor in a bad way. Have fun with it! Date: 10/4/12 11:16 PM I bought a Vitamix a few months ago and just love it. It was expensive compared to the standard blender. I mostly make green smoothies with mine using Greek nonfat plain yogurt, unsweetened fruit juice such as dark cherry or OJ, kale (which I wash and put in Cuisnerart first or chop in large pieces), and any other vegetables such as spinach, carrots,etc. I add a little Splenda or honey. The Vitamix is a lean, mean machine. I bought a basic one which has a lower profile blender container. It fits in my kitchen better.
There are tons of recipes online for smoothies. My Vitamix also came with a recipe book which I glanced at but mostly I make my own concoctions. I am so glad I bought it.

Date: 10/5/12 6:20 AM You will LOVE it! I just traded my old one in and got a new one two months ago. I use it for everything--ice cream for my boys, smoothies, soups, dry grinding, cheese sauces, adult drinks, fruit purees and the list goes on.
I don't think greek yogurt would be a problem but you might want to google "cooking with greek yogurt" or something like that for tips. I can't imagine separation of the yogurt would be an issue with the Vitamix though. There are never any problems cooking my cheese sauces in the Vitamix with the cheese separating for obvious reasons.
My favorite nightly smoothie is greek yogurt, kale, apples or pineapple, frozen blueberries, and some water. Maybe a little stevia to taste. You will be so happy with it! Have fun with it and enjoy! ------ Big 4 Pattern size 12, RTW bottom: 6, RTW jacket 8, RTW top (no size fits me well!)
Measurements: 34 HB/36 FB (34C bra)/27.5/36 (and working hard to keep it that way.)
Machines: Sewing (Janome Memory Craft 3000 and Kenmore 158 Series machine), Serger (Babylock Imagine), Embroidery (Janome 300E)

Ryan's mom, great idea to google cooking with yogurt. Duh! Google is where I turn to for info on everything but I never thought to query how yogurt is used in regular cooking.
I found this on Livestrong.com:
When using Greek yogurt in sauces and stove-top recipes, add it near the end of the cooking process, Stonyfield Farm advises. Heating yogurt over 120 degrees will destroy its beneficial bacteria. Stir a few spoonfuls of the hot mixture into the yogurt to gradually warm it, then stir the yogurt into the hot mixture. Heating yogurt too rapidly can cause it to separate into curds and whey. Warm yogurt to room temperature before adding it to hot mixtures and heat it slowly, stirring constantly. Always fold yogurt into other ingredients to avoid thinning it out too much. Don't use aluminum products when cooking with yogurt because the acidity of yogurt can react negatively with aluminum.
So if I convert a Vitamix recipe, I will have to fold in the yogurt at the end. ------ Tess

I lightly steam some of the produce that is part of my favorite smoothie then gently blend it with ice before adding uncooked vegetables and fruit.
I read that the latest model is quieter. Hope so. Maybe it's crushing the ice that makes ours seem so noisy. We both use hearing protection when using it just as we do with any of the shop tools. ------ I have no idea what Apple thought I was saying so be a Peach and credit anything bizarre to auto correct. |

Date: 10/5/12 1:33 PM Love, Love, Love my Vitamix. Here's a recipe for orange pancake syrup. You can substitute other fruit for a change of pace, like blueberries. If you use frozen fruit, it must be thawed first.
4 cups orange sections, seeded and peeled
1/4 - 1/2 cup sugar, depending on the sweetness of the fruit
Blend on high 4-5 minutes, until heavy steam comes out. If you want thicker syrup, transfer to a saucepan and simmer 20-30 minutes.
I make the syrup first and let it simmer while I mix the pancake batter and cook the pancakes. |

Yes, for a soup, but not for something that is going to stay cold.
