My Ellegante was recently serviced, so I'm fairly confident the problem is with how I'm handling the fabric. The two areas where it is skipping stitches are (1) using a basic zig zag stitch to apply the hook and loop tape [3 layers of fabric: PUL, flannel, h&l tape], and (2) sewing a narrow zig zag along side the encased leg elastic while stretching it.

I think there's a trick to managing the stretching while sewing. Any ideas?

When I apply foe to diaper covers I use the 3 step zigzag. I like the wider stitch because it's easier to catch both sides.
When stretching on elastic use your needle down position, that way you can't pull anything out from under the presser foot. Also if the layers seem to be shifting, you can baste them together first. As for skipped stitches, I've just used a universal needle with no problems.

My grandmother taught me to sew when I was 10, and I've been sewing ever since.

My best method for elastic that you have to stretch is to tack down each end in place before stretching. You probably already do this, but I remember the dawining light when I first figured it out. Then I hold the Center and stretch the first half, then the second half.
