I believe that if a single company paid you over $600, they have to give you a 1099. If you have multple companies that paid you $600 each, they also would each have to provide you with a 1099. It is their responsibility to provide you with those.

I don't have a problem with declaring the income at all. My issue is that they probably won't want to provide me with one, unfortunately so I wasn't sure I would need one from them. It was only one check and a one time job.

I guess my question is, do I need a 1099 to claim the income?

No, you don't. It's for informational purposes only. You don't have to attach it to your tax return like a W2. You just have to keep track of what you made and declare it on your income tax return.
