attaching a t-shirt collar

Originally I planned to just tuck the collar under and sew a hem-like collar. Except I apparently cut too much of a neckline to do that well so now I am trying to attach a "quilt-like" border--basically the same edging I apply to finish a quilt. (Binding.) But the collar is rounded so it causes a "gathering" along the collar. Any advice? Shorter pieces mean less gathering or do I just need to stretch it right? I always suggest bookmarking this and making it a favorite for all that those who struggle with neck bindings for knits.

I love videos that walk me through. I need a ruler like hers too. I have other ones that I like for cutting and measuring other things, but that one looks like a great waistband/binder one. I knew when I laid out the neckline that it would have to be stretched somehow, but darned if I could figure out how to do it. Her t-shirt looks like it's going to fit better than mine too... Sadly, the nicest thing about the t-shirt is the collar! I'll need to work on the rest of it...maybe she has more t-shirt advice. I'll have to look. I just cut an old t-shirt for the pattern and based it from that. It did okay, but I don't think I attached the sleeves very well.
