I'm taking a tailoring course right now at my local fabric store. We're doing traditional techniques (pad-stitching, making our own shoulder pads and sleeve heads, etc) and I'd be happy to be a part of this sew-along. We spent one course fitting out jackets and now learning all the techniques for construction before we move onto cutting and assembly.
