So, I was at Hancock Fabrics over the weekend, and they had a sale. I was taken by this fabric: Hancock ( http://www.hancockfabrics.com/Aztec-Green-Border-Matte-Jersey-Fabric-Matte-Jersey_stcVVproductId149305044VVcatId538904VVviewprod.htm) , so I bought a couple of yards. I am a beginner/advanced beginner sewist/er. My initial thought was to make the fabric into this pattern Simplicity 2648(Simplicity 2648: http://sewing.patternreview.com/patterns/28014 ) (it says it can be done in a knit), but I am having second thoughts, particularly given the horizontal striped nature of the pattern -- any input/advice?

I, myself, think if you're adamant on sewing that dress out of a knit that this fabric is too thin. I think you'd need a more stable knit. Just my opinion!

So, maybe a shirt then?

Matte jersey generally wants to drape gracefully. I'd make it into a very simple skirt. Or, if you have enough, a simple a-line skirt with a matching, loosely-fitting but body-skimming tank or shell.

You're kind of stuck with the horizontal orientation of the bands. I think it would look funny and unbalanced if you tried to make something with the bands oriented vertically.

That fabric is lovely and it may follow me home eventually too.
Don't use it for Simplicty 2648. That dress is too structured. I did make it out of a knit but it was medium weight jersey that had some structure to it. You need something to take advantage of the drape of that fabric. What about a Maxi? A knit top would work too. A flowy skirt? McCall's 6433 McCalls
McCall's 6074 mccalls
or McCalls 5974 mccalls
I have not made any of those yet but they have lots of reviews.

I used McCall 5974 for this type fabric and it worked like a dream. I am not much for dresses as I only have two in my closet now that I can wear. This one gets lots of wear. I love the pattern and I love the fabric and the combination is a match made in heaven!

I did sew the maxi Mccalls 6074 out of a drapery, soft knit and it came out really nice and that pattern is quick and super east.

Thank you all for your wisdom and thoughtful suggestions. I think you are spot on -- this should be something a little flowy. I love the idea of a kicky ONE HOUR DRESS (6074), but, as I'm trying to get better at fitting, I may go with 5974. Thanks all, again, SO MUCH!

You should stick with something that will play well with the horizontal stripes (no half circle skirts!), and having fewer seams will make it easier on you (less matching).

Some other suggestions:
NL 6571
NL6071 (that gathered neckline would be interesting - wonder how it would look in your stripe?)
S2580 (again I wonder what the bodice on C would look like...)
