I just found a great publication from Kentucky's Cooperative Extension Service explaining the various types of seams and seam finishes and when to use each. I thought others might find it helpful, so I wanted to post the link:

For me seam finishing has always been a bit baffling. Commercial patterns always instruct you to press seams after sewing, but nobody seems to ever instruct you to finish the seam (much less HOW). I sewed a few patterns before I ever stumbled upon anything about the need to finish seams (Thank you, Diana Rupp and the Sew Everything Workshop book, for this important bit of info!).

Well, anyhow, if you're in the same boat as me, here's a good resource.
