You did a beautiful job and got a terrific bag -- from what seems to me (as a sewer of bags) to be a pretty difficult pattern. I wouldn't attempt it, if only because of the binding issue. The instructions to sew the binding and seams all in one fell swoop is downright foolhardy, IMHO. But you overcame all obstacles.

I liked the alteration idea. I believe the actual "look" of the taper is a better visual design besides being technically a better built bag. Good job!

I made this bag, I zigzagged all the layers together close to the raw edge and them put the binding on with no problems.
