Great job on taming the bulk of the fleece. Check out "Polarfleece, A Sewing Expedition" by Nancy Cornwell. She has you trim the seam allowance to 1/4" then with wrong sides together sew the seam. Doing that you don't have that turn of cloth bulk to deal with.
