I came across this book in the library the other day and ended up photocopying quite a few pages - it has instructions for several backpacks. I've been wanting to make one for ages but haven't got around to it yet - these instructions look pretty good, though.

Have you considered drafting one yourself? The basic concept isn't complex at all--a back, a front, a side panel, pockets if you want them. Play with it in paper. You could scale your GP pattern up, too. I think you'd be surprised with your results! If you need a hand with the basic construction, PM me.
You might also find a tutorial on the message boards at crafster.org. Maybe your 6th grader would like one like this.
