My husband found a recipe online to can sliced green tomatoes. Slice 1/4" thick,place in wide mouth jar,cover with boiling water & process for 10min in water bath. Then use as usual. Has anyone ever tried this or anything similar?

The closest thing I've done is make green tomato piccalilli the same way. I can't remember the recipe I used, but it makes all pickle relish obsolete. Put it in tuna salad and wow.

I have made green tomato pickles many times, but that involves an acid, so am not sure about the safety issues. My recipes calls for a much longer water bath. I've lent out that book, so can't look up the exact time for you, sorry.

Sounds very similar to any standard canning recipe for whole, red tomatos. You should be fine. If you are worried try adding a Tablesoon of vinegar to each jar to raise the acidity.

I checked online with someone who is a canning expert. She did not think it was safe due to the short water bath time compared to ripe tomatoes.
I don't like the relishes & doubt my husband has ever even had any--regional differences.
The good thing is my tomatoes are getting ripe as the weather has been so weird around here we haven't had a heavy frost yet. The leaves on some of the trees have started turning gold, many are still pretty green. At this rate, I don't like to think what winter will be like.

I've never canned anything so can't comment about this, but ours have just gone into a pickle ( green tomato, small amount of onion and apple, raisins, vinegar, spices, sugar) which is very yummy.

Yep. Keep in mind they will be too mushy to fry, but if you're okay with that, then go ahead. Add 5 minutes to the canning time to be on the safe side.
