Pinapple Sage...Favorite Uses?

No blossoms yet, but it's early for that in my area. This year, I'd like to make full use of it. In the past, I've mostly dried it for sachets and used it fresh with flavored cream cheese. I've been looking at jelly recipes and found some using both pineapple juice and apple juice. Has anyone tried either? Since it's supposed to be good for heartburn, I'd like to freeze some in case it doesn't make it through the coming winter. Has anyone done it successfully, preserving the flavor and scent? I have steeped it in the cream when I make a custard dessert, or a a sorbet, to refresh your palate. One way I have really enjoyed using it is in a grilled pineapple and roasted poblano/anaheim chili salsa to top salmon, or eat with pork tacos. And it is delicious in a compound butter, with some fresh chopped chives, on pork or beef or under the skin of a roasted chicken. I have never frozen it, to preserve it and to use later. I know some mints and tender herbs just turn an ugly brown after freezing. I just learned that blanching basil before turning it into an oil or pesto will retain its brilliant green color. I have to say I was shocked because I always thought it was such a tender herb But it was amazing how well it stayed so green! Do you think that method might work? Have fun. Let me know what happens.
