Do you always need to put in a center back seam with an upper back curve or can you some how still keep the back on the fold so you don't have a seam in the middle of you shirt? I can not seem to find an answer.

If you want to put the back on the fold, you need to add neck darts if it is a large adjustment. You may be able to ease in the excess fabric if the amount is small and your fabric is cooperative.
