How would you recommend I hem a silk jersey evening gown? Is a coverstitch hem too casual for a high-end gown?

When I made my silk jersey gown I used a blindstitch on my machine that was especially for knit fabrics. It has the zig-zags closer together than the normal blind stitch. On my Janome 6500P it is Mode 3, stitch 07. It was fast and practically invisible from the outside.

I think you can, but I did mine using a regular sewing machine.

Machine or hand blind hem. My dd has a silk jersey Diane Von Furstenberg dress. It's blind hemmed with a blind hem machine after double turning a narrow hem.
