How well do you think FOE would work instead of an interlock for the binding on these?

I think interlock would be softer than FOE, it might be better in interlock for a new born.

It would work, but to me the advantage of interlock is that you can use it for self binding and ribbing. I save my scraps and use it for ribbing on other fabrics.
