That is so cute and creative. I have made the v-neck, and want to do the bib version next. I think the instructions want you to put the front facing on the inside and then topstitch it down. That's kind of boring. I think your way is better and that's what I am going to do.

It turned out really nice! I love the quote "....I had an image in mind of how the tunic should look when finished, and when the pattern instructions seemed to head off in a different direction, I put them away." I often do that myself, so I could relate to that statement!
