It looks great - so versatile, and your fabric choice is great. The bunching: years ago my mother used a Vogue patterh with an empire drawstring. The pattern used a horizontal fisheye dart just below the drawstring, to eliminate that little pooch of fabric. It was easily concealed by the topstitching used for the drawstring casing - and I think the same principle could be used here, too.
