My iron has a feature that allows me to override the auto shut-off. It's a feature I really appreciate, but I don't trust myself to remember to unplug the iron when I am finished sewing. Leaving the iron on and unattended isn't safe. So I devised a method that will override my forgetfulness.
I keep the iron plugged into a simple timer. Keeping the iron plugged into the timer reminds me to use the timer. When I start to sew, I set the timer for the amount of time I expect to sew and plug it into the outlet. Then, I enable the iron's override feature. If I forget to unplug the iron when I’m finished sewing, the timer will shut the iron off. Of course, I'm trying to get into the habit of unplugging the iron, but this is a good back-up plan.
ETA: I have been advised to get a heavy duty timer for my particular iron because the iron draws so much power. That makes sense to me, so I bought a timer different from the one pictured.

They make surge protector timers too. I haven't used a timer, how creative. I used to put it in a serge protector which I just flip off. A few years ago I got an extension cord that has a foot control button that lights up. It makes it easy to see if it is on or off and so simple to step on and it shuts down the power.
