Does anyone have any recommendations for knit fabrics without spandex/Lycra/elastane? I find those added stretch fibers irritating and I don't like the way it affects fit. I'd like to find a jersey or interlock for some fashionable draped tops, and maybe a true bottomweight ponte if such a thing exists these days. I like polyester and poly blends, and prefer them because they don't wrinkle. (No time for ironing with a very active toddler!) Any experiences with the Jo-ann Sew Classics knits (Jet Set and poly cotton interlock come to mind)?

Nancy's Notions has Bare Knits interlocks which are good quality.

Nature’s Fabrics has a nice selection of knits without spandex, some of which is organic. Organic Cotton Plus is another good resource. I’ve also found some non-spandex jerseys from Mood Fabrics but you do have to read the description carefully to make sure you’re not getting spandex.

Kaufman Dana jersey knits are modal/cotton and drapy (good for tops and dresses). I’ve bought them at fabric.com.
Birch organics interlock is 100% cotton and more of a mid weight knit, but I’ve only seen them in prints. They are also available at fabric.com among other places.

You might also want to look at Fabrications . Their knits are solids but you might find something you like. Very occasionally you can find a non-spandex knit at EmmaOneSock.

You've gotten some nice advice here already, which I may also look into, as I don't always want lycra in my knits. Though, I agree, it is hard to find knits without lycra. I first thought of Alabama Chanin for their organic cotton jerseys, but they are pricey.
My advice, based on experience, is to stay away from JoAnn Jet Set like it's the plague. I teach kids to sew and they often show up with this knit because it's inexpensive and comes in lots of colors. This stuff runs if you look at it. It used to be 3.99 a yard, but I've noticed it's gone up to 6.99 a yard. It makes me mad that they've raised the price on this inferior knit. But I guess if people still buy it, the more power to them. It is nice and soft, I admit, but other than that...
My opinion about the poly cotton interlock is that it's somewhat better than Jet Set. The issue with it is that it sticks to itself, so it's hard to lay out to cut and it comes out of the dryer with back stuck to front. I don't use dryer sheets, so this may not happen with those. It also seems to stretch out of shape, even with the poly content.
If you want to try either of these knits, I urge you to try them with a small tee-shirt to see how you like them.

Just keep in mind that a lot of the 100% cotton knits will grow as you wear the garment. It can be well fitted and neat when you put it on, but baggy and sloppy looking within an hour or two. I love all natural fibers, but now stay away from 100% (and low lycra) cotton knits, but I only shop online so I can't test recovery in advance.

Another source is The Fabric Fairy . She has many solids, some kid style and seasonal too. In my experience, the quality is very good.
