I have heard of two fabrics stretch poplin and stretch sateen, that I am not familiar with. I know that there is cotton poplin pant weight fabric. What are these fabrics like? What is their weight? What are they used for? Do people like sewing with them.

If you do a search of the message boards on "stretch woven" you get a whole bunch of topics.

I probably have too many sewing machines, but how am I supposed to resist when they're either free by the side of the road or people give them to me?

They are cotton/lycra blends, and I treat them almost exactly the same as I would a cotton fabric of the same weave and weight. I say almost because the stretch makes a difference in fit. I made some pants out of cotton/lycra twill, and one pair is too snug and one pair is a little loose. I'd had the fabrics in my stash for a while, so I don't know if the lycra content is different (ie 2% and 4%).
You know, this happens with my regular wovens, too. I think it's the same weave, weight, fiber content, so it should make up the same, but it doesn't always happen.

Bonny lass, bonny lass, will you be mine?
You shall neither wash dishes nor serve the wine;
But sit on a cushion and sew a fine seam,
And feast upon strawberries, sugar, and cream.
