Hi, new here. Trying a sheath dress and wondering, can I just serge the seams? Or do I really need to sew, press open. press to the side, then serge the SA together? Thanks.

I almost always serge the seams. I do it the other way only if the fabric is very thick and I need to reduce bulk, or if there is some other detail of the pattern that requires the seam to be pressed open.
Others may disagree with me but I find sergers perfectly OK for construction -- they are fast, finish the edge at the same time as sewing the seam, provide a similar/identical finish to RTW, create a narrow seam, and don't need to be trimmed as a separate step.
For princess seams, the serged seam is narrow enough that it will lie flat without needing to be clipped around the curves.

I too overlock (serge) the seams unless for particular detailing I need to press open.
Another tip is when you press the curve of the seam use an ironing ham and press the seam allowance towards the side seams not towards the centre of the dress.
