I was just commissioned to create a skirt out of bamboo knit (which is very light, soft and slinky) and I would like to applique along the hem. Can I do this using my zigzag stitch or will the stitches stretch the fabric leaving my appliques messy? How do I applique on very stretchy thin knits?

I think what you're referring to for your hem is actually a rolled hem. It can be done on a serger if you have one (refer to your owners manual to see the proper set up) or you can do something similar to it on your sewing machine. I'm not sure exactly how it's done on the sewing machine, I think it's just a close zig zag with the zig being on the fabric and the zag just being off the fabric. If you stretch it while you're doing this, it will make a lettuce edge look.

As for appliquing a design onto knit fabric, you'll need to put a stabilizer behind it. I personally perfect an iron on stabilizer that you tear off when you're done. Some don't like this type of stabilizer because they are afraid it will distort their work when they remove it, but I'm really careful when I remove it and haven't had any problems. I just like the iron on because it stays in place and keeps the fabric area I'm working on taunt and it doesn't stretch out of place while I'm working. You can also use a cutaway stabilizer under it too, you just need to pin it in place. Stabilizers can be found on the notions wall at Joann's or Hancocks or any other local sewing store.

I haven't done a slinky but I do successfully applique on lightweight knits for kids clothing. I also use a tearaway stabilizer on the garment fabric plus a double-sided backing material on the actual applique (Steam-A-Steam sticky fusible, one side sticky and one side fusible) to place the applique. I also lower my stitch density of the satin stitch a little bit to help avoid puckering.

I've done knit and lame appliques on swimwear fabric just using a zigzag.
I like to stabilize the applique with tricot iron on interfacing, than I pin and stitch. Spray adhesive is another nice way to baste. Be sure and loosen your presser foot pressure.
