My iron has a dial that shows the various settings, but it can and always has been able to be turned far past the end of the last setting, so I am always quite nervous about delicate fabrics. I am thinking that with my digital meat/candy thermometer, I could test it to find out about how hot it actually is, but I don't know the recommended temps for various fabrics.

I've always wondered the same thing - irons never say tell you the degree - maybe the fabric types that a particular temperature is good for. I find the setting to be somewhat subjective and I usually have to work by trial and error - testing on a scrap of the fabric to make sure before committing to the actual garment.
