I want to sew PJ's for my daughter using a cotton knit fabric. I don't understand what to use for the cuffs and neck band. I want to use a contrasting fabric for looks (the body will be a print and I want solid arm/neck) but is the fabric going to be a different type or is it the same? It's just a regular knit t-shirt type of fabric that I'm using for the body--do I use the same for the neck/cuffs and just stretch it while sewing so that it kind of gathers? If it's something different, what is that fabric called and where can I find it?

To finish the neck and cuffs, you'll need to use ribbing, which is very stretchy and sold by the inch. When I have been unable to find ribbing, I've substituted a cotton lycra jersey, or cotton interlock, both are quite stretchy.
You might look into KwikSew patterns because they will have instructions about how to measure and apply the ribbing. The patterns are easy to follow and are good for beginners. They have them at Hancock fabrics and here on Pattern Review.
