I am not sure if these happenings fall under the title of rules or laws, but here are a couple of my favourites. I think everyone should be aware of them.
1: You will trim and even topstitch a seam before you discover that you have made a mistake.
2. You will have a garment ninety percent completed before you realize that you hate the style.
3. You will cut one of the pieces of your garment too short as soon as you run out of fabric.

Do you have any favourite rules or laws?

4) The distance a spool of thread or a bobbin can travel under a piece of furniture is the length of your arm plus one inch.

There's no such thing as too much fabric.

Unrepairable mistakes occur when you do not have more fabric to redo it

You will get an entire garment cut out, before you realize you have the design going the wrong way...ask me how I know

The better you match the thread color, the more likely you will need to rip stitches out.

I don't really make mistakes ... I create "learning opportunities"! Murphy says: The better you match the thread to the fabric, the more likely you will need to rip some stitches out! I spend more quality time with my seamripper than I like ...
Yes, I DO love fabric!!

I'm doing that right now. Navy blue on slinky navy blue sweats. Ugh.

Murphy's Law is alive and well in the sewing room....all sewers will experience it, but newbie sewers are particularly vulnerable...and, from time to time, the chosen few will be sought out and repeatedly terrorized by it.

I did the most lovely jean zip yesterday, it looked great, all topstitched beautifully, very accurate etc.

undid my basting stitches, opened the zip, when I realise I'd put the zip in backwards. So the zipper tab was on the inside.
Had to undo the whole thing, including all my lovely topstitching
