I just ordered interfacing from Pam Erny's shop after hearing so many good comments here.
I've ordered large quantities in the past from Nancy's Notions but later, I have no idea what's what.
Does anyone have pointers on how to get organized? Pam sent me an email telling me what to start with for light weight knits and wovens. That's two different products right there! (No complaints - I'm thrilled as I know I'll be getting better results than using the same interfacing for every fabric and project as I did in the past.)

I use vacuum-pack baggies for the larger quantities, and jumbo ziplock baggies for the smaller quantities. Toss the info sheet in, as well, and you always know what's in which baggie and how to pre-treat etc.
And you can get a LOT of interfacing into those vacuum-pack bags.
Bed, Bath & Beyond sells them cheap.

I have mine rolled on heavy tubes (originally home dec tubes, cut down) with the type of interfacing written on the edge of the tube.
