I would like to make some clothes out of organic jersey cotton and then dye them afterwards. Does anyone know if anyone makes dyeable serger thread, or is it all made of polyester? Does cotton wrapped polyester take dye, does anyone know?

If you are using a serger the thread will be hidden after construction. There is certainly cotton sewing thread available and you can use it in your serger, but it's a lot more expensive.

I was thinking that if I needed to do a rolled hem, then the thread would be showing. Could I use cotton for the hems and poly for the construction of it then?

I've had good luck with using Aurifil 50 wt cotton thread in my pfaff 4872. I've tried other cotton threads that are cheaper but they have been thicker or have caused tension problems. I've also dyed cotton jersey with fiber reactive dyes and then matched colored thread to it. Aurifil is more expensive but it's a nice thread and if you are buying one color it doesn't seem cost prohibitive unless you are selling garments you make for a business. You can likely find it at a quilt shop. Dharma Trading Company may sell a cotton thread---seems like their latest catalog had thread. That's where I get fabric and dyes.

I work at a dye works and use a rolled hem on many of our products. Currently we use Gutterman 100% cotton on large cones because it's readily available. We have also used silk thread on cones from Dharma and Rayon embroidery thread on cones. They are all take dye, but each fiber grabs the dye differantly.
