I hope this means you found what you wanted! I hopped on this topic when I saw it this morning because I have some Irish linen in the stash, originally bought so I could make my own and embroider them. Haven't had the courage to cut it yet, though.

Can't help with the source (although Fabrics-store.com used to sell ready-made tablecloths and napkins in linen, cotton, and linen-cotton blend; I have a set of 4 beautiful cotton napkins they threw in with my order once!)... but Mary Corbet had an *excellent* article this morning on Using & Caring for Vintage Embroidered Linens.
