I have cucumbers coming out my ears right now and would love some new ideas of ways to use them, other than pickles. DH doesn't like pickles and I don't eat more than a couple of jars a year. The hens have been enjoying some excess but I'd like to find some interesting ways of using them up in our meals too. Ideas?

Oooh, cucumber lemonade! Lots of recipes on the web, but of course I can't find the exact one I used. You take a couple of cukes, puree them and put them in a sieve to let the water drain out. Pressing it out with a wooden spoon or spatula speeds it up a bit. Make some simple syrup (equal amounts of water and sugar heated until the sugar melts; cool slightly before using), and juice maybe 6 lemons. When I did it yesterday I got about 2 or 2 1/2 cups of cucumber water, about 1 3/4 cups of fresh lemon juice, and I used a cup of simple syrup. Mix it all together and make sure to let it chill to really bring out the flavor. You can also dilute it a bit if it's too intense, but a couple of ice cubes will also do the trick. Some people also like to add mint. Enjoy!

Cucumber salsa or cucumber relish - I haven't made either for a lot of years but may start again now that I'm getting back into gardening.

aw man...cucumber-tomato salad...quick and easy - DD fights me for it and says it counts as her veggies when I make it (tomatoes, cucumbers, Italian dressing is the easiest version)....actually somewhat refreshing during the summer

Tzatziki will use up a couple of spares -- or a cucumber raita. Or cucumber salad, or cucumbers and onions in sour cream, or gazpacho, or various coolers and agua frescas and cocktails, or...

I cook peeled, seeded and sliced field cucumbers with sauteed onions, garlic and diced lean bacon. I serve the dish with microwave oven baked and peeled Yukon Gold potatoes. I don't like to eat potato skin in my mashed potatoes.

Dessert is usually fresh fruit or no sugar added small diced fresh fruit salad, topped with a spoon full of coconut yogurt.

If one searches Google one can find several recipes online. Julia Child and an actress prepared sauteed cucumbers too.

When I find seedless cucumbers on sale, price reduced for fast sale, 3 for $ 1.00 , we call long English cucumbers, I don't seed them.

The first time I ate sauteed cucumbers was at a dear childhood friend's home when both of us were eleven years old. We are still best friends.

I never had a real recipe. Most of the time I cook food by smell and taste.

I prepare peeled very thin sliced cucumber salad with dill, parsley, pinch of sugar, salt, pepper, garlic granules, oil and vinegar. No tomatoes.

I prepare thin sliced tomato salad a similar way with small diced fresh onions. No garlic, dill, parsley or sugar.

A version of tzatziki. Fresh mint and garlic together blend into its own taste. Add a little salt, a quart of yogurt and peeled cucumbers in big chop or thick slices cut in half if big. Lemon juice is optional: for him, try it without. Remove juicy center If not eating right away. Serve a bowl as morning snack and also with meals. The sale thing with smaller choppped cucumbers plus a little lemon juice is a sauce for grilled foods and a salad dressing.

f hubs doesn’t care for pickles then he probably doesn’t want much of foods with tart dressings either. Use instead a little fresh lemon juice, a pinch of sugar, and a little salt instead of tart dressings in recipes that call for them. Also at serving time offer a dollop of yogurt to tame tart dishes.

Seitch green herbs to whatever you have. Marinate with fresh basil bruised with garlic, lemon. and salt to marinate cucumbers. Don’t serve that basil because it will look like seasweed.

In this heat -- salads!

I add chopped cucumber and yellow bell peppers to my panzanella salad. (I also prefer to use balsamic instead of red wine vinegar in the dressing.)

Classic Greek salad -- cucumber, tomatoes, feta cheese, Greek olives.

Tuna salsa salad -- canned tuna, canned artichoke hearts, cucumber, celery, red bell pepper, jarred salsa, olive oil/lemon juice dressing, salt & pepper. Serve on crackers or in tacos.

Asian beef or chicken salad -- lots of recipes online include cucumber.

A most unusual but delicious combination I had in an Indonesian restaurant was chunks of cucumber and mango in a peanut satay sauce. Its cool sweetness was perfect with spicy nasi goreng (fried rice).

Or cold soup -- both red and white gazpacho include cucumbers.
