I bought some of Costco’s Kirklands roast beef that comes in a can. What can I make out of this?

Hash. Cubed roast beef, potatoes, onions, salt, pepper. Simple perfection.

Beef salad... like ham or chicken salad.

Or mix with a rice pilaf and assorted cooked veggies, seasoned as you wish -- I like teriyaki, or sumac + cumin.

Or toss on noodles with "stroganoff gravy".

Or add to spaghetti sauce.

Just remember that canned meat is already cooked. If you put in the meat at the same time you put in raw potatoes, you're going to have roast beef mush hash.

When I was a little girl, I thought it was called Jumble-aya because it was a jumble of leftover foodstuffs.

You’re exactly right.
I thought it was French for clean out the refrigerator because tomorrow is grocery shopping day.

New to me. In case anyone is interested this is the label shown for the product on the Amazon listing. When I searched for the product several Stroganoff recipes popped up.

A combination of beef and pork makes a great burrito. If I used the canned beef for quick burritos for two this would be the approach....
Sautée a sweet onion.
Toss in some of the canned beef.
Toss in equal amount frozen sliced pork roast from freezer (yup, there is some in the freezer right now).
If desired, toss in small can green chili peppers.
Season with no salt.
Add enough water for a slow thick simmer like you are cooking shoe leather (only it will be faster since the meat is already cooked).
Cooked when the meat falls apart with little assistance from a fork.
(If you cook this from scratch using raw meat, cool, place in fridge overnight and skim fat the next day before final steps.)
Now, add another freshly caramelized onion and a little Monterrey Jack cheese. Possibly small additional amount of water.
Gently heat and stir until the cheese melts and is spread through the meat mixture.

Use for burritos, toppings, sliders, snacking..... If the weather is cold this ranks right up there with stew and chicken soup for comfort food.

Really nice roast beef sandwiches.. since its already cooked. If you are looking for a complete meal then take up BriarRoses suggestion . Just don't add the roast until the veggies are done. Since I do mine in a crock pot its easy to add the roast at the last few minutes just to flavor the stuff.. add a bit of brown gravy to it all.

Roast beef has a distinct taste.. so that reason a taco .. yuck.. same with stroganoff..

I would be curious what you paid for it and how many ounces are in a can..
