My favorite no-bake peanut butter snack (Moderated by Deepika, EleanorSews)

Hi all!
When I was a kid, we had this corny kid's cookbook that had a recipe for the most delicious peanut butter - chocolate-chip - coconut balls. I can't remember what they were called, and my mom doesn't have the cookbook anymore.
Oh I loved them so much, and when I do internet searches, I can't seem to find quite the right recipe. So here's as much as I remember: I think the ingredients included, among other things:
Peanut butter
Chocolate Chips
Powdered sugar (or was it powdered milk? AND powdered sugar?)
Maybe some other things. . .
But then this mixture was formed into balls and rolled in flaked coconut . . .
They weren't baked. I think they were just refrigerated at that point.
Anyone know of this recipe?

My best friend and I used to make those when we were kids, and found the recipe quite flexible. Our method was:
1. Get a big blob of peanut butter.
2. Mix in powdered sugar until it has the texture of cookie dough (we didn't use powdered milk, just sugar)
3. Mix in other stuff - chocolate chips, raisins, nuts, whatever else is around
4. Roll into balls.
5. Refrigerate until firm.
When we used coconut, we just mixed it in because we didn't have the patience for all that rolling.

What about this?
INGREDIENTS:
1 1/2 cups peanut butter, Skippy or equivalent, not natural peanut butter
3 and 1/4 cups of powdered sugar
1/2 cup butter, softened
1 tsp. vanilla
1 package chocolate chips
shredded coconut
TOOLS:
electric mixer
bowl
serving plate
Mix peanut butter, butter and vanilla with an electric mixer until well blended.
Add the powdered sugar, a little at a time, blending with the mixer until all the sugar is mixed in. The dough will be slightly crumbly when all the sugar is added. Then add the chocolate chips and mix the dough up by hand.
Form the dough into 1 - 1 1/2 inch size balls by rolling the dough between your hands. Roll each ball in coconut then set formed balls on a plate for serving, and they are ready to eat!

Were they coated with chocolate?
No, the only chocolate was the chips mixed in to the balls.
My mom does have another recipe for peanut butter balls dipped in chocolate, though, YUM.

I bet this is pretty close. It sounds awesome, I can't wait to make these.
My coworkers have been laughing at me today because they think it's funny how important it is to me to find this recipe . . . I bet they won't be laughing when they taste how DELICIOUS these are!!!

I just did a google search for "peanut butter, chocolate chip coconut balls" and that's what I found! I love that it specifies not to use natural peanut butter!

What!?!? Seriously, I tried google. I kept finding weird stuff with flax seed and honey. Oh well, thank you!

The reason why the recipie specifically states NOT natural peanut butter is because of the texture. In natural peanut butter, the oil tends to clomp up on top of the bottle and the rest of the peanut butter is rather dry. Of course the pro side of this is that there is very little in it but peanuts and salt.
Commercial peanut butter also contains hydrogenated oils and generally a little corn syrup as well. " hydrogenated to be artificially "hard" at room temperature" so you can see that texture of this goodie you are going to make depends on the right type of peanut butter.
I would THINK
what the heck, If I'm going to indulge in something special, a childhood comfort goodie...what does one more less than perfect ingredient matter. For example, when I want a Snicker bar, I can eat lots of ther things. many of them much more 'healthy"..but its the Snicker bar I'm craving!
