On several fabric websites, I've seen knit fabrics called 'ITY'. Spandex World has 'Stretch ITY' and says it is 92% poly, 8% spandex.
What does the ITY refer to? Is this a brand name? A certain weight or texture? I haven't found an explanation on any of the online stores.

I wondered this too and ordered some from Denver Fabrics when our Aussie exchange rate was favourable. ITY is lush jersey fabric, EOS has a great description.
I have since found it here in Oz at outlets that sell high quality Designer leftovers - its worth pursuing.

it's a poly elastene jersey fabric mostly produced in Korea although it is also produced in Turkey. Has become quite a basic mainstream fabric in the wholesale world now, it runs alongside the viscose elastene version so popular now.

I am always fascinated by the description. The Emma One Sock guide describes it as soft, beautiful and comfortable to wear.
Is it breathable like a natural fiber or does it trap moisture?

I have found it to be very comfortable to wear and it doesn't trap moisture although I don't live in super hot climate. It is drapey and lends itself to making tops and either fluid or semi fitted dresses. I made a mock wrap dress adapted from a KS top pattern and I wear it a lot in the summer when it is quite warm out. I have also made a couple of nice tops out of it. Oh, and if you don't like to iron it is almost impossible to make it wrinkle (unless you leave it wadded up in the dryer for a couple of days like I have
) so it packs very well

I am not a fan. I made a top out of it and feel like it clings and sticks. Hot in summer, clammy in winter. I also have hot flashes and try to stick to natural fibers. Lots of people love it, just not me.

It's poly spandex. It breaths like poly spandex, in other words, not at all.
