Sometimes after I cut out my fabric (with the pattern piece on top) it doesn't match the pattern piece- it's cut too short or narrow.
I am careful to lay out the fabric & pattern flat- measure it and pin it down- yet sometimes after I cut it out- it's all wrong- too short or narrow- the seam lines don't match up

are you picking up the fabric/pattern piece when you are cutting them because that could make things wonky.
have you ever used a superboard? it is a giant piece of cardboard that is gridded. it was one of the required supplies when i took a garment sewing class. you can pin your fabric to it and then pin the pieces to the fabric. the fabric is held smooth and flat, so that might help.

it doesn't matter what type of sewing you do. you are sewing, and sewing is good.

Is the surface you are using large enough for the layout and cutting without shifting the fabric?
If the fabric is knit, lay it flat. Don't pull, tug or let it hang over the edge of the cutting surface.
In fact, you may have to lay it out and let it relax for a few hours before pinning the pattern to it.

Yep, I use a super board, but get it at Hancock's if you can...It's about half the price of Joann's.
A few things I've noticed with my sewing students: They want to pick up the material when cutting, they move the material instead of walking around it, they cut with the scissors on a slant.

yup. that's it. i'm surprised at how well they seem to hold up too. i've carted mine out to a number of classes (in rainy seattle) and it hasn't totally disintegrated! LOL.

Have you tried using a rotary cutter and mat? As another alternative, you may find this is a good way to stop the fabric shifting.

I don't understand how the grid help- you can't see the lines on the board under your fabric--??
