Too me ITY doesn't wrinkle and I wonder if I can skip that step... Just as a time saver... Or is that just too lazy? Does anyone else skip ironing ITY?

I normally don't iron before cutting as long as there are no obvious wrinkles. If there are I just toss in a rinse cycle and dry to remove them. I do press during construction.

Ditto.
You need to press seams flat, even with ITY or any knit. ITY does hold the pressed seam even through laundry.
Use a press cloth and high heat.

I've been afraid of melting ITY, so I set my iron to the "middle of the road" setting during construction. Aaand... it doesn't hold the press through the laundry that way. No, I definitely do not iron ITY tops after laundering, either! It still looks OK to me, but maybe my eye for wrinkles is not particularly well-trained.

I wash my ITY tops in cool water delicate, then I line dry them.They don't have a single wrinkle once dry. I then fold them on the hanger. I use the method where you fold the shirt in half so the fold is on the CB and CF. Smooth out all the wrinkles. Put the hook of the hanger in the underarm area. Now fold the sleeve over the hanger and tuck it under the bottom rung of the hanger. Next fold the body of the top over the hanger. It looks odd but will hang nicely in the closet and won't need a drop of ironing. I iron during construction but once made the above is all I do and they look great.

Well, no you don't actually *have to* -- the fabric police will not knock on your door. But, if the fabric really needs it and you skip this step, someone might ask if you slept in that shirt? :)
Seriously, the answer is, it depends. If the yardage is wrinkled, then yes, you really do need to iron it gently before cutting out the pattern pieces. Or try tossing it in the dryer with a damp towel until both are dry, and remove the yardage right away while it's still warm.
If you are sewing on a regular machine w/pressed open 5/8 seams, then yes, you will need to iron at least in places where seams cross or meet.
Having said all that, if it's something simple like a T or tank, and the fabric is not wrinkly, and all seams (except maybe hems) will be serged, then you might be able to get away without ironing.

I don't iron knits before cutting or during construction unless there are obvious creases/wrinkles. That said, if the fabric is wrinkly I probably won't buy it in the first place. I like my clothes to look great straight out of the laundry basket or suitcase.
